Baked Chicken Breasts

Our favorite way of cooking chicken breasts to add later into salad, soup, chili, etc.

2 to 6 boneless, skinless chicken breasts
1 to 2 tablespoons olive oil
salt and pepper

Preheat oven to 400°F. Pour olive oil into a glass or ceramic baking dish big enough to hold the chicken breasts in a single layer. (Use ¼ to ½ tablespoon of oil per chicken breast.) Sprinkle your desired amount of salt and pepper over the oil. Place the chicken breasts in the dish, turning them over in the oil and seasonings to coat them fully. 

Place the dish in the oven and bake for about 22 to 30 minutes, depending on the size of the chicken breasts, until they reach an internal temperature of 165°F.
