Refreshing accompaniment to Mediterranean-style meat and poultry dishes, as well as falafel
1 small garlic clove
pinch of salt
½ cup low-fat or whole milk Greek yogurt
1 teaspoon fresh lemon juice
1 tablespoon chopped fresh mint leaves
¼ teaspoon salt
freshly ground black pepper, to taste
Mince the garlic clove, then sprinkle the pinch of salt over it and use the side of a chef’s knife to mash it to a paste.
Combine the garlic with all the remaining ingredients in a small bowl and stir well. Let the sauce sit (ideally for at least 30 minutes) before serving, to help the flavors meld. Refrigerate if storing for later use.
